The first Fou Zoo pop-up restaurant

In late September, we opened our very first pop-up restaurant. Weeks of preparations for just a single evening. Do you want to know how it went? We were given school detention, and in the canteen at that!

Our 30 guests did not know though – we announced the location as late as just a day before the event. Not only the location, but also the concept and the menu were kept top secret. The words September and school cannot really be separated, and that’s why we decided to open the pop-up in the secessionist building of the Grösslingova grammar school in downtown Bratislava.

Our guests were served the most select dishes: St. Jacob’s mussels with foie gras, wagyu served on charcoal, and duck with hokkaido, tamarind and king oyster mushrooms.

We paired the exclusive dishes with unique wines. As for soft drinks, we served surprising combinations of nectars – apple with parmesan, strawberries with wasabi and pomegranate with cocoa beans.

To finish up the evening, we poured our guests a glass of Kobe-infused whisky. Everything joined together to become a unique experience.
